Winning Recipe for January 2007
A big thank you to Lan who brought this wonderful dish to our
Stuffed Tomato Snackers
1 dozen campari
2/3 cup cottage cheese
4 Tbsp diced celery
3 tbsp chopped green onions
2 tbsp mayonnaise
3 tbsp chopped parsley, reserve a little for garnish
1 pinch of each of the following
salt and pepper
fresh lemon juice
Slice off tomato tops. Scoop out pulp. (You don't need to throw it out
as it makes great salad dressing and pasta sauce!)
Invert tomatoes on paper towels and allow to drain.
Combine cottage cheese, celery, green onions, mayonnaise, tarragon,
parsley, salt and pepper and a sprinkle of lemon juice. Mix well.
Fill each tomato shell with mixture.
Top off with a pinch of paprika and garnish with reserved paprika.
