Recipes from Janine's Kitchen ~ April 2007 Recipes

I made these recently and Cynthia loved them and requested them for the newsletter so here they are, Cynthia! :) My friend, Stacie, who is a singer, actor and yoga teacher made these for me when we visited her in Nova Scotia this last summer. They are very light and refreshing.

Spring Salad Rolls
Difficulty: Easy

2-3 chopped apples (keep this separate)
1/4-1/2 bunch of coriander (cilantro)
1/2 to 1 shredded carrot
1 package of mixed green or arugula
Rice wrappers

Dress the salad with:
lime
honey
salt/pepper
olive
optional dash of sesame oil
I also added a touch of tamari to the dressing

In a sink with warm water, place 1 rice wrapper. Dip both sides in and place onto a plate. Take a handful of salad greens and dot apples along the salad. Roll 1 end over and turn end corners to tuck them and continue rolling into a cigar shape roll. Repeat with the rest of the salad mix until finished. An apple in each bite is nice. Serve with your favourite dipping sauce or try the one below. If you're not serving them right away, use a damp paper towel between layers so they don't stick together. Or just put a damp paper towel on top to keep them from drying out. Enjoy!

Dipping Sauce:
I made a completely different dipping sauce. This recipe is from the ReBar cookbook. I've modified it but I'll put the original in. I did use my own mango chutney so that can make a difference to store bought.

1 cup mango chutney
juice of 1 lime (original uses 2 limes)
zest of 1 lime
1/4 or to taste rice vinegar (original uses 1/2 cup)
1 tbsp minced ginger

Puree the mix together and taste.
