Wow, fall is really here. It's been a good bounty and I've been in a
baking mode but decided most of us would get enough sweets from Halloween.
Here's an easy one to do with some of the great cauliflower out there.
Roasted Cauliflower
Difficulty: Easy Approximately 45 minutes including
preparation
1 cauliflower
2-4 cloves of garlic minced
juice of 1 lemon
Olive oil
salt & pepper
Topping Selections
Approximately 1/4 to 1/2 cup depending on the size of your cauliflower
~ Parmesan Cheese
~ Nutritional Yeast
~ Ground almonds
For extra crunchiness add some bread crumbs to the mix as well or combine
any.
1. Heat oven to 400°F
2. Wash & cut cauliflower into florets. (Tip: if you're in a hurry
cut into smaller florets for shorter baking time)
3. Mix dressing together. (Tip: if you have a favourite oil based salad
dressing, use that instead).
4. Toss cauliflower with dressing. Spread onto baking sheet.
5. Sprinkle toppings on top and bake for 15-25 minutes depending on
how soft you like your cauliflower and how small you cut the florets.
Use a fork to test. Enjoy!
