Recipes from TYS Kitchen ~ July 2009 Recipe

Gazpacho is a chilled Spanish soup that is refreshing on a hot summer day. This flavourful raw food soup recipe is filling as well as flavourful.

Gazpacho Soup - Raw

Serves 4-5

1/2 cup water
1/4 cup extra virgin olive oil
5 large ripe tomatoes
2 cloves garlic or spicy pepper to taste
1 tablespoon raw honey (dates or raisins work just as well)
1/4 cup lemon juice
1 teaspoon sea salt
1 bunch fresh basil
1 large avocado
1 medium bell pepper
5 stalks celery
1 small onion
1 generous pinch parsley, chopped

1. Blend the first 8 ingredients in a blender until smooth.

2. Cut the avocado, bell pepper, celery, and onion into 1/2-inch pieces and combine with gazpacho liquid in a bowl.

3. Sprinkle with parsley or basil and serve.
